Ten with onions or five on kajmak,
ćevapi are something of a magic
word that doesn’t even have to be
spoken to be understood. They are
ordered as a magical number, - five
or ten.
They are inseparable from street and
kafana culture in the Balkans, to be
enjoyed in the city, with friends or
family. Spicy Leskovac, Sarajevo,
Pazar, Banja Luka... ćevapi are
named by the cities they come from,
not by regions or nations.
They are good when they are hot,
stuffed in a half of somun bread, with
onions of course, spicy if you like
them that way and go well with
kajmak, too.
They go well with with beer, red wine
and conversations about local
football and neighbourhood
legends. They don’t go well with
politics.
Ćevapi are the Balkans’ contribution
to urban civilisation.
